James’ Shan Ju

Shan Ju literally means “grilled meat” in the Kachin language, and refers to the way the ethnic Kachin people from northern Myanmar grill game meat – on skewers, with a healthy amount of herbs. Best eaten straight off the grill!

Ingredients:

Beef (lean cut), sawtooth coriander, sesame oil, ginger, garlic, chilli, Thai basil, Sichuan pepper, kesom, coriander, salt

Instruction:

  1. Cut the beef into small even-sized cubes.
  1. Pound the herbs into a paste, and mix with the meat. Leave to marinate for a few minutes (marinate longer for better flavours).
  2. Skewer the meat and grill over charcoal, for about 2-3 minutes on each side, or until cooked. Do not overcook it.
